What should be noted when operating a vacuum chopper?

Vacuum chopper is a widely used equipment in the food processing industry, mainly used for chopping, mixing, and emulsifying raw materials such as meat products, fish paste, vegetables, etc. Due to its operation involving high-speed rotating cutting tools and vacuum environment, many safety and technical details need to be paid attention to during operation to ensure the normal operation of the equipment, stable product quality, and the safety of operators. The following are the key points to note when operating a vacuum chopper:

1. Equipment inspection and preparation

Before operating the vacuum chopper, it is necessary to inspect the equipment to ensure that it is in good condition:

Check the tool: Ensure that the tool is securely installed without looseness or damage. The sharpness of the cutting tool directly affects the cutting effect, and passivated cutting tools should be replaced in a timely manner.

Check sealing: The vacuum system of the vacuum chopper relies on good sealing, and it is necessary to check whether the sealing ring, vacuum pipeline and other components are intact to ensure no air leakage.

Check the lubrication system: Ensure that the lubrication system of the equipment is working properly, especially the bearings and transmission components, to avoid equipment damage caused by insufficient lubrication.

Cleaning equipment: Before each use, the internal cavity and cutting tools of the chopper should be cleaned to avoid residue affecting product quality or causing pollution.

2. Raw material preparation

The quality and condition of raw materials have a direct impact on the cutting effect, so the following points should be noted:

Raw material temperature: The temperature of the raw material should be controlled within an appropriate range, usually 0-4 ℃. Excessive temperature may cause fat to melt and affect emulsification effect; Too low a temperature may make the raw materials hard and increase equipment load.

Raw material cutting size: The raw material should be cut into a suitable size for cutting and mixing, avoiding being too large or too small. Large chunks may damage the cutting tool, while small ones may affect the uniformity of cutting and mixing.

Adding auxiliary materials: If auxiliary materials (such as ice water, seasonings, etc.) need to be added, they should be accurately weighed according to the formula and added at the appropriate time to ensure even mixing.

3. Operation steps

The operation steps of the vacuum chopper must strictly follow the equipment manual. The following is the general operation process:

Start the device: After confirming that the device is in good condition, start the chopper. Run at low speed first, and gradually increase the speed after the raw materials are preliminarily mixed.

Vacuum pumping: During the cutting process, start the vacuum pump to pump the interior of the cutting machine to the desired vacuum level. A vacuum environment helps to remove air from the raw materials, improving the density and taste of the product.

Control cutting time: The cutting time should be adjusted according to the type of raw materials and product requirements. Too short a time may lead to uneven mixing, while too long a time may cause excessive emulsification of the raw materials, affecting the taste.

Monitoring temperature: During the cutting and mixing process, it is necessary to monitor the temperature of the raw materials in real time. If the temperature is too high, ice water can be added appropriately or the cutting speed can be reduced; If the temperature is too low, the cutting speed can be appropriately increased or the amount of ice water added can be reduced.

Shutdown and unloading: After the cutting and mixing are completed, stop the vacuum pump first, and then stop the cutting and mixing machine. Open the discharge port and discharge the mixed raw materials.

4. Safety precautions

The operation of a vacuum chopper involves high-speed rotating cutting tools and a vacuum environment, which poses certain safety risks. Therefore, special attention should be paid to the following matters:

Wear protective equipment: Operators should wear protective gloves, goggles, etc. to avoid injury caused by tool splashing or material splashing.

Prohibit hand contact with cutting tools: During the operation of the equipment, it is strictly forbidden to insert hands or other objects into the interior of the chopper to avoid serious injury.

Avoid overload operation: The load of the chopper should be controlled within the rated range of the equipment to avoid equipment damage or safety accidents caused by overload operation.

Emergency stop: If there is any abnormality during the operation of the equipment (such as abnormal noise, excessive vibration, etc.), the emergency stop button should be pressed immediately and the cause should be investigated.

Regular maintenance: The equipment should be regularly maintained, including replacing worn parts, cleaning the equipment, inspecting the electrical system, etc., to ensure long-term stable operation of the equipment.

5. Cleaning and maintenance

The vacuum chopper needs to be cleaned after use to prevent residue from breeding bacteria or affecting the next use:

Dismantling and cleaning: Remove removable components such as cutting tools and sealing rings, and clean to ensure no residue.

Cleaning the inner cavity: Use a cleaning cloth or brush to clean the inner cavity of the chopper, paying attention to cleaning dead corners and avoiding residue accumulation.

Disinfection treatment: After cleaning, disinfect the equipment to ensure hygiene and safety.

Dry storage: After cleaning, the equipment should be dried to avoid residual moisture that may cause rusting or bacterial growth.

6. Troubleshooting

During the operation, some common faults may be encountered, which need to be promptly investigated and handled:

Insufficient vacuum degree: It may be due to damage to the sealing ring, blockage of the vacuum pipeline, or malfunction of the vacuum pump. Relevant components need to be inspected and replaced.

Uneven cutting and mixing: This may be due to tool passivation, excessive cutting of raw materials, or insufficient cutting time. It is necessary to check the tool condition and adjust the operating parameters.

Equipment abnormal noise or vibration: It may be due to loose cutting tools, damaged bearings, or overloaded operation of the equipment, and it needs to be stopped for inspection and repair.

7. Operation records and training

Record operating parameters: During each operation, key parameters such as cutting time, vacuum degree, and raw material temperature should be recorded for subsequent analysis and optimization.

Operator training: Operators need to undergo professional training, familiarize themselves with equipment structure, operating procedures, and safety precautions to ensure standardized and safe operation.
